Mozzarella and Feta cheeses are now produced in Bangladesh and used by chefs in making pizza, sandwitch and salad at restaurants in posh hotels.
At least 15 dairy farms have been producing quality cheese in Thakurgaon over the past few years.These cheese farms are located at villages near Thakurgaon town. Everyday, 20,000 litres of milk is used to produce the cheese, which is sent to 5-star hotels, chain shops and fast-food outlets in Dhaka. Dairy farm sources said 10 to 11 literes of milk is required to produce one kilogram of cheese. Some 1,800-2,000 kgs of cheese is produced in every day in those farms, where 200 male and female workers are engaged.
Only a small amount is sold at the local markets because of its high price. Here it is selling at Tk 1,000 per kg.
Md Nurul Huda Swapan, General Manager of Northern Agricultural and Industrial Company Limited (NAICOL), a concern of Ejab Group, said in Thakurgaon, Humanitarian Agency for Development Services (HADS) first started producing cheese in 1996. At that time HADS brought an expert from Denmark for the purpose and started marketing the product. Danish citizen Henrik and his wife stayed in Thakurgaon for six months, when he conducted research in making the cheese under local climatic condition. He had tested these cheeses at the 5-star hotels of Dhaka in preparing food items. Later, he trained up workers at the dairy farms in Thakurgaon to produce the quality cheese.
Primarily, HADS produced two types of cheeses -- Mozzarella cheese and Feta cheese. The trained workers have been producing and selling the cheese to the 5-star hotels, chain shops and fast food producers in Dhaka. Now, the Thakurgaon cheese is competing with those imported from foreign countries.
