Ingredients
2 cups Atop or polau rice
1 cup coriander leaves, chopped
1 teaspoon ginger, chopped
1 tsp garlic, chopped
1 tsp green chilies, chopped
1 glass water
2 cups warm water
Salt, to taste
Topping
Egg or cooked beef curry
Achar (pickle)
Preparation
Wash the rice and drain. Soak in a glass of water for six hours. Drain the water and put in a blender. Add two cups of lukewarm water and make a smooth batter. Pour into a bowl, add salt and mix well. Wait for two hours.
Heat a heavy and deep small iron korai or pitha (pie) mold on high heat. Pour 1/4 cup batter and cover with a lid. After 1 minute, put some beef curry or crack an egg as topping on the pitha and cover again for 2 minutes.
Gently lift the edges of the pitha, and then remove the entire pitha. Put aside on a dish. Repeat the process till all the batter is used up. Serve the pithas hot, with pickles. n
