Luchi and Aloo Dum

Ingredients

Flour - 4 cups

Oil for kneading - 1 ½ tbsp

Oil for frying - 250 ml

Sugar - 1 tsp

Salt - ¼ tsp

Baking powder - ¼ tsp

Water - 1 ½ cup, or as required

Method

Mix the ingredients (except the oil for frying) and knead well with your hands to form a firm dough.

Now, cover with a damp cloth and leave the dough to rest for about half an hour.

Divide the dough into small balls and roll out into small rounds, or luchis.

Fry them in hot oil till they puff up. Drain excess oil on kitchen paper and keep aside.n

Aloo Dum

Ingredients

Baby potatoes - 400grammes

Tomatoes - 3 medium, chopped

Onion - 1 large, chopped

Ginger paste - 1 tablespoon

Garlic paste- 1 tbsp

Red chilli powder – 1 teaspoon  

Turmeric powder - 1 tsp

Coriander powder - 1 tsp

Cumin powder - 1 tsp

Whole cumin - ½ tsp

Bay leaves- 2

Green and black cardamoms - 2 each

Cloves - 4

Cinnamon - ½ inch stick

Salt - As per taste

Chopped coriander leaves for garnishing

Method

Boil the potatoes with some salt, and peel them properly.

After cooling, pierce some holes on them with the help of a fork.

Pour some oil in a pan, and when it is hot enough, add chopped onions and sauté till it turns pinkish, and then add ginger and garlic pastes.

Then add all the powdered spices, except turmeric, and some water.

Fry the mix till oil separates.

Now, add the tomatoes, turmeric and salt and cook till the tomatoes turn soft.

Add the boiled potatoes and fry to let them absorb all the flavour.

Finally, add a little water and let it come to a boil.

Reduce the water to desired consistency and remove from flame.

Garnish with the chopped coriander.

Serve with luchi. n
