Sizzling Beef
Ingredients
Brown sugar - 1/2 tablespoon
Olive oil -1/4 cup (60 ml)
Garlic - 2 cloves, minced
Soy sauce - 3 tbsp
Fish sauce - 2 tbsp
Vinegar- 2 tbsp
Beef steak – 1/2 kg flank, cut into chunks
Onion - 1/3 cup (115 g), thinly sliced
Butter - 1 tbsp
Salt and ground black pepper - To taste
Coriander leaves – Few sprigs
Lime or lemon slices - To serve
Method
In a small bowl, add brown sugar, 1 tablespoon olive oil, soy sauce, fish sauce and vinegar, and mix well to make a marinade.
In another bowl, put the chunks of meat and toss with 3 tablespoons of marinade. Allow to marinate for 1 hour.
In a large saucepan, add the remaining oil and heat over high heat, until almost smoking.
Add the marinated meat to the oil and sauté for about 2 to 3 minutes, until well-browned on all sides.
Add the garlic and remaining marinade to the pan and stir to coat the meat.
Bring the mixture to a boil and simmer until thickened.
Add the butter, onion and coriander leaves before turning the heat down.
Sprinkle with lime juice and serve with rice.
Pan Pizza
Ingredients
For Topping
Mozzarella and cheddar cheese - 1/2cup (25 grams), grated
Pizza sauce or ketchup - 3 tbsp
Red capsicum- 1
Green capsicum- 1
Onion- 2
Mayonnaise- 1 tbsp
Beef - 225 g, boiled and shredded
Black pepper - 1/3 tsp, ground
Dried oregano - 1 tsp (optional)
Sausages - Optional
For Dough
All purpose flour - 2cup (260 g)
Instant yeast - 2 tsp
Sugar - 1 tbsp
Salt - 1 tsp
Milk powder - 2 tbsp
Oil - 3tbsp
Warm water - As required
Method
In a bowl, add flour, sugar, salt, milk powder and yeast. Mix very well for the dough.
Add oil and mix it. Now, slowly add warm water to the flour mixture and make smooth, springy dough.
Place the ball of dough in a large flour-dusted bowl. Cover the bowl with a damp cloth and place in a warm place for about 1 hour, until the dough has doubled in size.
Meantime, boil the beef with a pinch of salt. Shred the cooked beef and mix it with black pepper.
Once leaven, roll out the dough on a floured surface to fit a 22 cm frying pan, or make two smaller ones.
Heat 2 tablespoons of oil in a frying pan on low flame and cook the pizza base on one side for 2 minutes, turn and cook the other side using 2 tablespoons of oil until the base is golden.
Spread the pizza sauce on top of the crust. Sprinkle grated cheese, shredded beef and arrange the diced capsicum and onion; and finally sprinkle dried oregano on top. Sliced sausages can be used as a topping, too.
Partly cover and cook over medium to low heat for about 5 minutes, or until the cheese melts.
Serve hot and enjoy with ketchup and chilli flakes.
