Pineapple Pancakes

Ingredients

Flour- 1 cup (128 g)

Baking powder- 2 tsp

Powdered sugar- 1 tbsp

Milk- ⅔ cup (160 ml)

Pineapple juice- ⅓ cup (125 ml)

Thin slices of pineapple- 2-3

Butter- ½ cup (115 g)

Pinch of salt

Method

Mix flour, sugar powder, baking powder and salt in a large bowl.

Add pineapple juice and 2 to 3 teaspoon of melted butter and mix properly.

Then pour in milk slowly and make a batter.

Spread some butter in a frying pan and roast pineapple slices carefully over a low flame, fry both sides of the slices.

Now, cut the roasted pineapple into pieces and keep separately.

Again, spread butter in the pan and take a full spoon of the batter and spread it around thickly.

Then top the batter with a few pieces of roasted pineapple and cook the pancake on both sides.

Serve hot.
