Moong Soup

Moong Soup

These healthy soups are easy to make and will warm you up on cold winter days. Enjoy!

Ingredients

•        1 cup chopped carrots

•        1/2 cup green mung beans (green gram), washed and drained

•        3/4 cup milk

•        1/2 cup sliced onions

•        1/4 cup chopped tomatoes

•        1 tsp oil

•        4 to 5 black peppercorns

•        1 tsp freshly ground black pepper

•        Salt, to test

Method

Heat the oil in a deep non-stick pan and add peppercorns, onions and garlic. Fry on medium flame for 1-2 minutes. Mix in the carrots and tomatoes, and cook on a medium flame for 2 to 3 minutes. Add the mung beans and 4 cups of water.

Cook for 7 to 8 minutes, or until the carrots are tender. Allow it to cool slightly and blend in a mixer to a smooth paste. Transfer the purée back into the pan and add the milk, 1 cup of water, salt and pepper. Mix well and bring to a boil. Serve immediately, with toasted pita bread or nun.
