Sheikh Iraj
Potato curry is a delicious dish to have for breakfast or for evening snack. Compared to other vegetables, potatoes are relatively cheap, which means you can always experiment with it. Potato curry is quite popular in our neighbouring countries, but many restaurants in Dhaka are now serving potato curry. Since the dish requires only a few ingredients and takes less than half an hour to make, one can easily make it at home.
Ingredients
Potatoes 7, medium sized
Ghee (clarified butter) 1/2 cup
Yoghurt 1 cup
Red chili powder, garam masala and salt, to taste.
Water 1 cup
Coriander leaves
Preparation
Skin the potatoes, cut into large pieces and boil. You can add a little salt while boiling.
Mix the yoghurt, red chili powder, garam masala and salt.
Method
Heat the clarified butter and stir fry the boiled potatoes for two minutes over low heat.
Add the yoghurt and spice mixture to the pan and cook for another two minutes.
Add water and cook over low heat for 10 minutes, until most of the liquid evaporates.
Garnish with coriander leaves.
Serve hot with paratha or flat bread (chapatti).
