Sheikh Iraj
Fried egg and tomato is one of the easiest recipes to make. It literary takes seven minutes to cook the dish. One can eat this healthy and hearty dish for breakfast, lunch or dinner. Without further ado, here is the recipe to cook this simply yet tasty dish:
Ingredients
Eggs 2
Tomatoes 4
Cooking oil 1/2 cup
Red chili powder and salt, according to taste.
Green chilies and coriander leaves, to decorate
Preparation
Dice the tomatoes into large pieces
Beat the eggs in a bowl
Method
Heat the cooking oil and stir fry the tomatoes for 3 mintues over medium heat. Remember not to use any extra water as tomatoes contain a lot of water. Make sure the tomatoes don’t become overcooked or too soft.
Add red chili powder and beaten eggs; cook for another 4 minutes. Add a few extra drops of oil if you see the egg mix sticking to the frying pan.
Decorate with sliced green chilies and coriander leaves.
Serve hot with paratha or rice.
