Hasselback Potatoes

Ingredients
•    20 baby potatoes
•    2 tablespoons of melted butter
•    Generous pinch of sea salt

Method
1.    Cut slices about 3 millimetres in thickness right across the potato, but keep them attached at the bottom.
2.    Place all the potatoes sliced side up in a roasting tray and brush each one with melted butter and give a good sprinkling of coarse sea salt.
3.    Roast at 400°F (204C) for approximately 45 minutes or until the slices of the potatoes fan out and turn golden brown.
4.    Serve straightaway. They go nicely alongside most dishes.

Tips
-When slicing, place the potatoes on a wooden spoon and cut. The dip in the spoon will prevent you from slicing all the way through.
-If the potato slices don’t separate while cooking, increase the heat for better results.
