Coconut Chicken Soup
Winter is the best time to enjoy warm soups. Homemade soups made from fresh meats and vegetables are not only great for nourishment, but delicious, too.

Ingredients
•    2 cups chicken stock
•    1 large onion, finely sliced  
•    225 g boneless chicken, cut into 1/2 inch pieces
•    200 ml coconut milk
•    100 g baby mushrooms, sliced
•    1 cup brown rice, cooked
•    Handful of coriander leaves, chopped
•    1-2 tsp lime juice
•    1/2 tsp light brown sugar

Method
- Combine the chicken stock, onions, 1/2 cup of water and sugar in a large pan.
- Bring to a boil.
- Reduce flame to low and simmer for 3 to 4 minutes.
- Add the chicken pieces, coconut milk, rice and mushrooms.
- Stir well.
- Cook for another 5 minutes.
- Add coriander leaves and lime juice.
- Serve warm.
Whole wheat chocolate chip cookies
There is nothing yummier than homemade cookies. These healthy whole wheat chocolate cookies can be eaten or gifted guilt-free!

Ingredients
•    1/4 cup honey
•    1/2 cup brown sugar
•    100 g unsalted butter, softened
•    1 medium egg
•    1 tsp vanilla essence
•    1½ cup whole-wheat flour
•    A pinch of salt
•    1/2 tsp baking soda
•    1/2 tsp baking powder
•    100 g of dark chocolate bar, chopped into chips

Method
- Beat together butter, sugar and honey with a beater until smooth and well combined.
- Add in the egg and vanilla essence. Beat again to combine.
- Sift together flour, salt, baking soda and baking powder. Add this dry mixture, 1/4th cup at a time, mixing well before adding the next batch, until you get a slightly sticky dough.
- Finally, add in the chocolate chips and mix them evenly in the batter by with a spoon.
- Preheat oven to 180ºC (350ºF). Divide the cookie dough into 20 balls and shape into cookies. Grease a biscuit tray or muffin pan and place the cookies out evenly.  
- Bake for 15 minutes.
- Remove tray/pan from oven and cool for 5 minutes before removing the cookies. Store in an airtight jar or tin when cooled completely.

Tips
- Bake cookies in a muffin pan to make each the same size.
- Always use eggs and butter at room temperature.
