The sight of Ma in the kitchen, making tandoori drumsticks for us on Friday nights! How we used to go gaga over the smell! I could hear my stomach growling for it! The kids and I would run into the kitchen almost every minute to grab niblets. Such anticipation, much more fun!
Here’s the recipe to my version of BBQ chicken drumsticks
You’ll need...
500 grams of chicken drumsticks, a teaspoon of paprika, a tablespoon of garlic paste, a teaspoon of ginger paste, a generous amount of honey (I’d say one-third of a cup), salt and pepper to taste, a tablespoon of vinegar, a tablespoon of oyster sauce, one-third cup of tomato puree, a teaspoon of green chili paste, a teaspoon of mustard oil, butter and oil mixture for frying.
Directions:
Prick the drumsticks with a fork so that the spices can sink in, then marinade with salt, pepper, paprika, vinegar, mustard oil and a tablespoon of sugar in a large bowl for an hour.
In a saucepan, pour a tablespoon of oil and fry the garlic and ginger paste, tomato puree, oyster sauce and chili paste till a nice aroma comes out. Add half a cup of water and stir, cover the lid and cook for 2 minutes. This is the BBQ sauce for the chicken.
Now pour the sauce over the chicken and mix well. In a grill pan, heat butter and oil and grill the chicken till tender. Inspect a piece to see if it’s cooked or not. You will know it is done when there is no more blood oozing out and the meat is completely white and tears off easily. Serve warm, with a side of roasted bell peppers, any kind of bread (I prefer naan or paratha) and your favourite chutney. You can sprinkle with lemon juice to add a bit of tanginess, and have a perfect dinner!
Shoulder Steak Slices
Here’s one way to prepare beef shoulder meat that not only you can dig in, but you can also share by having loved ones over, or even refrigerate to eat later.
For this you’d need
A chunk of beef shoulder meat (about 500g), 2 tablespoons of soy sauce, 2 tablespoons of vinegar, salt and pepper to season (be generous with the pepper, please), 1 tablespoon of ginger paste, 1 tablespoon of garlic paste, 3-5 green chilies made to a paste with some coriander, juice of half a lemon, 1 tablespoon of mustard oil, 1 tablespoon of honey, and a secret ingredient that I use in almost all of my BBQ recipes _ half a can of Coca Cola _ (this will be worth it, I promise!).
Directions
Well, it is super easy, but it will take a bit of time. Make a mixture of all the spices in a large bowl and gently cover the chunk of beef with it and marinade for a good four hours (add the Coke last).
Then preheat the oven to 250 degrees C and bake the beef with the marinade liquid for 2 hours, covered in aluminum foil. In the last half hour, uncover the foil so that the beef chunk gets a smoky BBQ finish. Make sure to spoon over the juices that come out over the meet from time to time. Once done, take the steak out and let it rest for at least half an hour before serving.
To serve, cut into thin slices and enjoy with your favourite selection of bread. Invite friends over and serve it the fancy way, sided with salads and even naan bread (best, I tell you).
And since the steak is mostly cooked in its own fat, with a little mustard oil added for flavour, you don’t have to worry about the grease because most of it is drained out. Of course, if you want, you can use the juice to make gravy. Add some kidney beans to make it a wholesome meal.
And the best part, you can refrigerate any left-over beef slices for over a week and make superfast sandwiches to have on the go!
