Ingredients
Pineapple – 500 g
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Fennel seeds (saunf) – ½ tsp
Raisins – 20-30 pieces
Cashew nuts - 20-25 pieces
Coriander seeds – ½ tsp
Fennugreek (methi) seeds – ½ tsp
Sugar – 150 gm
Oil – ½ tbsp
Method
Cut pineapple into small pieces and blend in a mixer (you can add some water) and make a paste. Heat a cooking pot and add oil and fry all five spices, but do not burn.
Add the pineapple paste.
Mix all ingredients well and cook for 5 minutes
Add sugar very slowly and stir continuously.
Add raisins and roasted cashew nuts.
Stir till it becomes thick (it will take another 5 minutes).
When done, serve hot or cold.
