Ingredients
For one glass:
Pineapple - 1 medium size
Mint leaves - 10-12
Ginger juice - 1.5 tsp
Lemon juice - 1.5 tsp
Sugar - 0.5 tbsp
Pinch of black (rock) salt
Pineapple wedge, lemon slice, mint leaves - for garnish.
Method
Peel the pineapple, remove the ‘eyes’ and cut into small pieces.
Put pineapple pieces and mint leaves in a blender (or juicer).
Blend them together to make a smooth puree.
Strain the puree into a medium size bowl to get pure juice.
Grate one inch (2.5 cm) piece of ginger, then press the grated ginger with your fingers to extract juice.
Add ginger juice, lemon juice, sugar and black salt to the pineapple juice and blend with a hand blender (or use an electric mixer).
Cool the juice in a refrigerator, or serve with ice cubes, garnished with a couple of mint leaves and a pineapple wedge or a lemon slice.
