Green Mango Iced Tea

Ingredients
Green (raw) mango – 1, boiled
Black tea leaves - 4 teaspoons
Sugar – 4 to 5 tablespoons, or to taste
Ginger - 2 tsp, chopped
Fresh mint leaves - 5 tbsp, chopped
Lemon juice - 2 tbsp
Ice cubes – 10 to 12
Plain water - 4 cups (240 ml)
Ice-cool water - 4 cups

Method
Peel, remove the seed and mash the boiled green mango. Keep aside.
Boil 4 cups of water with ginger and sugar.
Add black tea leaves and boil for two minutes.
Turn off heat and add mint leaves. Cover for a couple of minutes.
Let the mixture cool completely. Strain and keep aside.
Add mashed green mango to the cooled tea, and mix in a blender.  
Take a jug, pour in the tea and green mango mixture, add lemon juice and ice-cool water. Mix with a spoon.
Strain and chill in the fridge for 15 minutes.
Take tall serving glasses and put in ice cubes.
Pour the iced mango tea into the glasses.
Garnish with chopped mint leaves.
Serve chilled immediately.
Note: You can replace the sugar with honey.

Mango Kulfi

Ingredients
Milk - 2 cups (480 ml)
Milk powder - 1/4 cup (35g)
Condensed milk - 1/2 cup (120ml)
Corn flour - 1 teaspoon
Sugar - 1/4 cup (50g)
Mango pulp - 1 cup (270g)
Crushed pistachios or almonds (optional) – 2 to 3 tablespoon

Method
In a non-stick saucepan, combine all the ingredients, except the mango pulp, and mix well.
Bring the mixture to a boil and then simmer for 3 to 4 minutes, until it thickens.
Let it cool completely.
Add the mango pulp and mix well.
Pour the mixture into 6 individual kulfi moulds or ice lolly moulds and place those in the deep fridge (freezer) overnight, or at least for three hours.
Remove from moulds and serve the kulfi quickly, sprinkled with crushed nuts. n
